Roasted Brussels Sprouts & Bacon


These little green nutritional powerhouses are often over-looked due to their somewhat bitter flavor. Smoky bacon, bright lemon juice, and sweet honey provide a much-needed makeover that balances out any bitterness. Roasting in mild-flavored avocado oil helps to crisp the Brussels sprouts, resulting in a moist, crunchy side dish for the fall season or any time of the year.

Oven Roasted Brussel Sprouts & Bacon

Ingredients

  • 1 lb Brussels sprouts cleaned
  • 6 slices raw bacon
  • ¼ cup Chosen Foods Avocado Oil
  • 1 lemon juice
  • 1 tsp raw honey
  • 2 tsp sea salt
  • 1 tsp ground pepper


Instructions

  1. Preheat oven to 375°F. Line a half sheet pan with parchment or a silicone baking mat.

  2. Cut Brussels sprouts in half (or quarters if they’re larger in size) and remove outer leaves and spread on the sheet pan. Slice the bacon in small pieces and spread over the Brussels sprouts.
  3. Combine the avocado oil, lemon juice, honey, sea salt, and ground pepper in a small bowl and whisk well. Pour over the Brussels sprouts and bacon and toss with your hands to coat, spreading everything out evenly.
  4. Cook for 30-40 minutes, tossing 1-2 times throughout the cook time. The Brussels sprouts will be browned and the bacon will be crisp. We recommend serving these warm.
