Cranberry Almond Granola Parfait (gluten-free)

Avocado oil roasts the oats perfectly without degraded nutrients from cooking. Add in your favorite gluten-free grains and seeds for extra crunch and texture to each bite. Enjoy it with milk or layer with greek yogurt and fresh fruit for an energizing start or satisfying finish to your day.

Ingredients

  • 2 cups whole rolled oats gluten free
  • 1 cup raw sliced almonds
  • ½ cup uncooked quinoa
  • ¼ cup teff or other gluten-free grain/seed of choice
  • ½ cup chia seeds
  • ½ cup 100% Pure Chosen Foods avocado oil
  • ¼ cup honey
  • 1 tsp vanilla extract
  • 1 tbsp almond extract
  • 1 tsp sea salt
  • ½ cup dried cranberries chopped
  • ½ cup apricot chopped (or dried fruit of choice)
  • plain Greek yogurt
  • fresh fruit

Instructions

  1. Preheat the oven to 325F. Line a half-sheet pan with parchment or silpat.

  2. In a large bowl, combine oats, almonds, quinoa, teff, and chia. Stir well and set aside.

  3. Spread evenly onto the lined sheet pan. Bake for 40-50 minutes (removing to stir 1-2 times throughout the cooking time), or until the granola is golden brown. Stir in the dried fruit and allow to cool 10-15 minutes before laying into the parfait.

  4. With a tall glass, layer the cooled granola with the Greek yogurt to desired serving size. Top with fresh fruit. Enjoy immediately!
