Chicken Satay with Almond Sesame Sauce

A traditional satay recipe made healthier with Chosen Foods Avocado Oil, almond butter, coconut milk, and sesame oil. The nutty bite of almond takes this sauce up a notch when paired with lime juice and spicy red pepper flakes. A great balance of lean protein and healthy fats makes this surprisingly delicious dish guilt-free.


Ingredients


Almond Sesame Sauce

  • ¼ cup creamy almond butter
  • ½ lime juiced
  • 2 tsp coconut aminos or gluten-free tamari
  • 2 tbsp Oi! Toasted Sesame Oil
  • ¼ cup canned organic full-fat coconut milk
  • pinch of red pepper flakes adjust to taste
  • ¼ tsp sea salt
  • 1/8 tsp ground pepper


Instructions

  1. Season the chicken tenders liberally with avocado oil and salt and pepper, to taste. Thread the tenders through skewers, aiming for one piece per skewer, as to not to crowd them. Cook over a high-heat grill pan (indoors or outdoors) until browned on both sides.
  2. While the skewers are cooking, make the Almond Sesame Sauce by combining all the ingredients in a small bowl. Whisk liberally until mixture is smooth and creamy. Serve alongside the skewers as a dipping sauce or drizzle to coat.
