Once fermented, black garlic has a black color & smooth texture

What is Black Garlic?

Black Garlic, or “Black Gold,” is garlic that has been fermented under high heat & humidity. During the fermentation process, sugars and amino acids within garlic produce melanoidin – a dark compound responsible for creating the black color and namesake of Black Garlic. It typically takes 35 days for the fermentation process. You know that black garlic is ready when it has a soft molasses-like consistency & texture.

Black garlic is made by garlic that has been fermented under high heat & humidity and takes weeks.

What are the Benefits of Black Garlic?

White Garlic is a mainstay in herbal remedies and homeopathic medicine because of its abundant antioxidant properties. Chosen Foods President, George Todd, has even been known to keep pickled garlic in the staff fridge for antioxidant snacking.

Black Garlic has twice the amount of antioxidants as its younger cousin, White Garlic. Black Garlic even has additional antioxidants that are created through the fermentation process, such as S-Allylcysteine, which is water-soluble and readily digestible!

If you want to skip the science jargon – Yes, Black Garlic is even better for you than regular garlic!

What Does Black Garlic Taste Like?

Black Garlic has a rich, creamy texture and can be spread on bread like butter. It is slightly sweet, tangy, and savory with hints of balsamic and a softened core of garlic. The sweetness comes from the natural sugars that are caramelized during the fermentation process. We usually describe it as earthy and robust. Black garlic has a mellow garlic flavor that is not as pungent as fresh garlic. It's delicious & can add a lot of flavors to whatever food or recipe you decide to pair it with.
