Kick Start the School Day with Chia Seed Granola

Chia seed granola parfaitThere has been lots of talk lately about public school lunches. Honestly, its about time. Getting kids the proper nutrition during the hours of their life we’re expecting them to learn and perform their best is so important. It goes much farther than school lunch though. How about making nutrition and food choice classes part of their regular curriculum, starting in elementary school? Or how about teaching them about grocery shopping and getting them involved with cooking? These ideas could be a post all by itself, so I’ll get back to what I really wanted to tell you about: Maple Cinnamon Chia Seed Granola recipe. This is an AMAZING breakfast and it will jump start your kids (and your!) day. Full of fiber and protein to keep them full until lunch and packed with vitamins, nutrients and omega-3’s, not to mention so tasty! Add about 1/4 cup of this Chia Seed Granola on top of high protein, organic, Greek style yogurt and you’ve got yourself a breakfast your kids will love, with a nutrition profile you can be proud to give them.

Maple Cinnamon Chia Seed Granola Recipe

Ingredients:

5 Cups of Certified GF Oats

1 cup coconut flakes

1/2 cup slivered almonds

1/2 cup palm sugar

1/3 cup AztecChia

1/3 cup pumpkin seeds

1/2 cup maple syrup

1/4 cup coconut oil

1/2 tbs cinnamon

1/2 tbs nutmeg

Directions:

Preheat oven to 275 degrees and grease a cookie sheet or a jelly roll pan. Combine all the ingredients except the dried cranberries and mix until the oats, nuts and seeds are coated well with oil and syrup. Spread the mixture out onto your cookie sheet and bake for 45 minutes. Remove from oven and mix up your granola. Put back in the oven until it starts to brown and reach your desired crispness (about 10 more minutes). Take out of the oven and let cool before serving. Granola can be made in large batches and stored in mason jars or some other air tight container. Serve with milk or yogurt.
